picol
I was about to ask the same question. Mine are still young so i think i will cut only the dried pitcher, but maybe cutting down the plant could stimulate the new grow.

Ordovic
Last year at the end of Summer, I cut back a single 10cm pitcher that was rotting from the middle and starting to go mouldy due to "indigestion", but was still green below; the putrid stench of the fluid that spilled out was simply vile. So I advise against cutting into any pitcher that isn't completely brown and crispy dry.

Alexis
I don't think they experience many winter burns in the wild so I'm not sure they are as tolerant to being cut down in the same way as sarracenia. I leave mine alone.
Dunc
Don't cut mine down aka the sarracenia and I'm not sure it wil do much good as they don't grow from the same type of rhiazome. I just clean up dead pitchers occasionally throughout the year. The pitcher mass gives the rather fragile ground shoots some protection.
