If I wanted to grow something from seed, what is the best way of sowing? Or does it vary from species to species? I am mostly interested in sarracenia, drosera, dionaea, and pinguicula.

Will a pot of pure moss peat, and the seed sprinkled on top be good enough? Then the pot left over winter. Or is more care required?

For sarracenia and dionea like you say,not problems at all, remember that seeds can germinate in a few weeks but even after 12 months,so be patience.pots  all the time in 2 a 3 cm water till germination, you can place this outside or inside .I never give some stratification to this ones.
For drosera ,you can see wats easy and wat not if you see to the prize and the rarity of the plants ,how more expensif how more difficult, drosera germinate mostly very good but the difficulty ,for me at least ,are grow up the plants still she are big enoufg for planted out.Mostly she are dissapear before she are big enoufg.

Pings ,Mexican or temperate? It s a real difference,Mexican are very difficult to sowing ,i have try this many times and mostly she never germinate,so i not do this anymore.I better spend my money in plants and try to got some seeds from my own plants, thats go match better.
Temperate ,sowing outside in a bog ,but not allways came out,you can sowing this inside to but then you must give them a stratification.i supoose it need some frost before she are germinate.
Better way for this is used some winterbuds,it s not match more expensif then seeds if you buy some very little ones,it s very easy to let grow this in new plants :l_sunny:

Most seed is easy to germinate when fresh.Remember it wants to grow.
Sarracenia and flytraps are easy,as you say just put them on damp/wet peat.
Ping seeds are just as easy but they must be fresh.I have never germinated any stored in doors over winter.
If sown as the seed ripens they germinate easily, usually 4-6 weeks.Or in spring as the days warm and get brighter from being sown the previous year.
