I am thinking of expanding my Mexican Ping collection and in the process of my research, I've seen lots of different media mixes including things like crushed coral, egg shells, lava rock, limestone chips and oyster shells. Can i take from this that Mexican Pings are not too sensitive to disolved nutrients in the same way other carnivorous plants are and can water them with tap water or should I use rain/distilled/ro water?

Considering that they grow on lime stone, the tap water should be used with no problem. I use it for a while and they are OK with it. It saves my distilled water for another CPs :-)

The mineral content shouldn't be a problem. You might want to consider passing it through a water filter though, to remove some of the chemicals that could be present.
